What about health department permits?

A business that deals in food products or drink preparation or handling of food or drink spurs a lot of interest from the local health department. Health ordinances commonly require on-site, regular inspections of such businesses and a clearance by the city or county health agency. These inspections may range from a quick walk-through of the facility to one lasting several days. The inspections may be done routinely, at random, or in response to complaints received by citizens, from tips, or from other government or private interest organizations. Inspectors check out the type of cooking equipment you use, your refrigeration and ventilation systems, and cleanliness of the facilities.
